I am not a big fan of Christmas Lunch in fact I could easily have had what i made tonight. New favorite. I will not bother to tell you how much of things as you will do better to use your own judgement.
Hickory Liquid Smoke to taste (usually a cap full)
Garam Masala (pinch)
Fennel Seeds (pinch)
Stock and tomato paste to thicken if needed
Nigella Seeds (pinch)
Veggie Diced and fried (onions, peppers, courgette, garlic, tomato, celery)
Black Lentils cooked (or you can cheat and use a pre-made pack like jamies “Dall”)
Smoked tofu diced
mix together in pan make mash or a pastry top and bake for 40 minutes. Tastes awesome with maple cumin roasted carrots and cauliflower (also had some fresh dill, ground turmeric and toasted sesame oil on them, was outstanding.) Another side I always love is to add when the green is missing is a kicky mixed greens with mint sauce, fresh chili , sesame seeds and lemon juice (tonights mix of asparagus, black kale and spring greens was no exception).
