Miso Cucumber salad

For a truly wonderful taste of Summer that compliments any curry, try this one.

Mandolin two cucumbers in to long thin slices, and add four spring onions finely chopped. Asian pear in thin spears, Sesame seeds toasted for the top.

Dressing

Tahini 1 tps, apple juice 3tsp, bunch of mint leaves, chilli to taste, and miso paste 0.5 tsp. Whizz it up and leave on the salad for 30mins before serving
