Maple Sweety Potato Soup

I know it sounds disgusting to those of us who happen to think that the most useful thing you can do with a sweet potato is not grow it in the first place.  But this one of those soups you can’t live without apparently, I made it for my teacher training and they have been begging for it since. so here.

Lots of Ginger (I used two big lumps peeled and roughly chopped)

Sweet Potatoes (about 4 large ones -I would peel if I had my time again but you do what you like)

Tamari (4-6 tablespoons)

Onions Fried (2 diced)

Mushrooms (just a few for texture and flavor finely chopped)

Coconut oil (2 tablespoons)

Maple Syrup (2-4 Tablespoons)

Stock

Parsley

Lime and coconut milk to garnish

 

I made it two pots and blended one then added then togeter for texture, you can and will do as you prefer. xx
